Veg Italian meatballs.

Ingredients:
- 600g anamma soya mince
- (or other formable soya mince)
- about 40g grated parmesan
- 1 onion
- 2 cloves of garlic
- about 10g fresh basil
- about 20g fresh parsley
- 3-4dl passed tomatoes
- Black pepper, white pepper & salt
- Olive oil
How to make it:
Finely chop or grate the onion (preferably use a food processor). Mix a little more than half of it with the soya mince and place the rest in a pan with some olive oil on low heat until the onion starts to become soft. Grate or press the one of the garlic cloves in the soya mince and one with the onion. Finely chop the basil and parsley and mix more than half with the soya mince and put the rest at the side for the sauce. Add 1 spice measure of black pepper, ½ spice measure white pepper, a pinch of salt and the parmesan to the mince.
Add passed tomatoes to the fried onion and season with back pepper, white pepper and salt to your taste, and let simmer on low to medium heat. Roll the meatballs and fry on medium heat with some olive oil. Add the rest of the basil and parsley to the sauce and lower the heat, taste. When the meatballs are done and have gotten some beautiful color, add them to the sauce.
Serve with pasta of your choice and top with some extra grated parmesan.
