Pulled BBQ jackfruit

Pulled BBQ jackfrukt. 

6 portions - 240 kcal per portion 

48g carbs, 4g protein and 5g fett 

Ingredients: 

  • 2 cans of jackfruits, 565g 
  • 1 tbsp oil 
  • 1 big onion 
  • 2 cloves of garlic 
  • 2 tbsp vegetable stock 
  • 2dl water 
  • 2dl BBQ sauce (1,5 + 0,5)
  • Salt and pepper 

How to make it:

Open the cans, pour it out and rinse of the fruit. You can use everything, even the core and the kernel, everything is eatable. Cut it from the core and out, with the fibers. Chop the onion and press the garlic and gry up in a pan with oil until it got some colour. The add the fruit, the vegetable stock and water, then let it boil for about 10 minutes. Transfer the fruit with all the liquid into an over tray, mix with 1.5dl of the bbq sauce and some pepper. Place in the oven on 200 degrees for about 20 minutes, until the liquid has dried out and the fruit has gotten some colour. Take is out and then press the fruit to make it fall apart. Add the remaining bbq sauce and more salt and pepper if needed. 

Can be used in sallads, wraps or vegan burgers.
