Lemon & ginger energy bars (raw).
20 pieces – 80 kcal per piece.
2g protein, 2g fat, 12g carbs
Ingredients:
- 130g oats
- 110g dried dates
- 2 tbsp. chiaseeds (30ml)
- 2 tbsp. bipollen (30ml) - optional
- 4 tbsp. liquid honey
- 2 tbsp. lemon juice
- Peel from one lemon
- 3 tbsp. crystalized ginger
- 30g nuts of your choice (I choose hazelnuts)
How to make it:
Put the oats in a mixer until they are the same consistency as flour, add the chiaseeds and mix. Put this in another bowl and put the dates in the mixer until they get a paste like consistency. Add the honey, lemon juice and lemon peel and mix until its all combined into a batter. Mix in the crystalized ginger, the nuts and (if you want) the bipollen. Put in a form with baking sheet and place in the fridge for atleast an hour. Cut it up in 20 pieces and store in an airtight container for 1-2 weeks in the fridge.
These energybars can also be frozen, so you can make a bigger batch and place some of it in the freezer.
