Ingredients:
- 2 big cauliflowers (one for rice and one for the masala)
- 2 big onions
- 1 orange/yellow paprika
- Coconut milk 400ml
- Tikka masala spice mix 70-80g (2 bags Santa Maria)
- 2 cloves of garlic
- 1 piece of ginger
- Chili flakes if you like it spicy
- Olive oil
How to make it:
Spit the two cauliflowers into smaller pieces, place one in a bowl and the other in a mixer until it has a rice-like consistency and put away. Pour some olive oil and ½ bag (20g) tikka masala over the cauliflower pieces and blend, leave to let marinate. Finely chop the onion and paprika and put in a casserole, add about 1 tsp. olive oil, some of the tikka masala spice, press or fine grate garlic and ginger. Put on low/medium heat until the onion start to become soft but has no color. In another pan, put the marinated cauliflower on medium heat and give it some color. Pour the coconut milk over the paprika and onion and add the rest of the tikka masala spice. Add some chili flakes if you like it spicy. Add the fried cauliflower and let boil for about 10 minutes. Taste and if necessary add more chili flakes.
Serve with normal rice or the cauliflower rice and maybe some broccoli, top with chili flakes.
