Carrot cake inspired oatmeal

Carrot cake inspired oatmeal. 

520 kcal per portion, recipe for one portion 

71g carbs, 21g protein, 13g fats 

Ingredients: 

  • 1,5dl fiber oats (or normal)
  • 3dl water 
  • 1/2dl vanilla protein powder 
  • 1/2 oatmilk 
  • 1,5 carrot 
  • 1/2dl chia pudding (1 tbsp chia seeds + 1/2dl oatmilk) 
  • 1/2dl oat yoghurt 10%
  • 1,5 tbsp honey 
  • Cinnamon, cardamom, salt 

You can use regular milk or other option if you want. Make your own chia pudding by mixing 1 tbsp chia seeds with 1/2 dl milk, stirr after 15 minutes and let stand in the fridge for at least 60 minutes but preferably over night. 

How to make it: 

Mix together the oats with water in a saucepan, grate one carrot and add to the pan. Add in cinnamon, cardamom and some salt. Put on medium heat and cook the oats. When the oats are nearly done, add in 1/2dl oat milk and 1/2dl protein and let cook together. 

Chop about a half of another carrot as finely as you can, place in a pan with 1/2 tbsp honey, some cinnamon and cardamom and fry until it goes soft and get a little bit of color. 

Mix together chiapudding with 1/2 yoghurt and some honey. 

Place the cooked oats in a glass jar and topp with the chia cream and the roasted carrots and enjoy!
