Black lentils stew Ⓥ

Ingredients:

  • 2dl dried black lentils
  • 2 yellow onions
  • 3 cloves of garlic
  • ½ chili pepper
  • 2 yellow paprika
  • 4 corn-cob (alt. 3 cans of corn unsalted)
  • 4dl passed tomatoes
  • Olive oil
  • 2 cubes vegetable broth
  • ½ tbsp. cayenne pepper
  • ½ tbsp. chili powder
  • 1 tbsp. paprika powder
  • black pepper

How to make it:

Boil the black lentils in 4dl of lightly salted water for 15min and then set aside and let it soak up the rest of the water. Chop of the onions and garlic and put in a pan on low heat with a little bit of olive oil until the onions starts to get soft. Add the lentils to the pan and all the spices except the broth, and mix it all together. Chop up the paprika and chili and add it to the pan, put it on medium heat and everything for about 3 minutes. Then add the tomatoes and the vegetable broth and let boil for another 10 minutes. Taste and if necessary add more spice. Cut the corn from the cobs and add to the stew, mix it in and its ready to be served!

Recommended to serve with rice, some cream fraiche (vegan) and some fresh tomatoes and/or paprika. Can also be served as a filling to baked sweet potato.
